Ingredients:
1/2 onion, diced
2 bell peppers, diced
3 cloves of garlic, minced
1 (14.5 oz) can of petite diced tomatoes
2 (15 oz) cans of black beans, rinsed and drained
1/2 packet of mild taco seasoning (Siete mild taco seasoning recommended)
2 cups of broth (vegetable or chicken)
Optional toppings: lime wedges, yogurt, fresh cilantro, Mexican cheese
Steps:
Sauté Vegetables: In a large pot, sauté the diced onion, bell peppers, and minced garlic over medium heat until softened, about 5 minutes.
Add Ingredients: Stir in the entire can of petite diced tomatoes (with juices), the drained black beans, taco seasoning, and broth.
