30-Minute Black Bean Soup

Ingredients:

  • 1 (14.5 oz) can of petite diced tomatoes

  • 2 (15 oz) cans of black beans, rinsed and drained

  • 1/2 packet of mild taco seasoning (Siete mild taco seasoning recommended)

  • 2 cups of broth (vegetable or chicken)

  • Optional toppings: lime wedges, yogurt, fresh cilantro, Mexican cheese


Steps:

  1. Sauté Vegetables: In a large pot, sauté the diced onion, bell peppers, and minced garlic over medium heat until softened, about 5 minutes.
