Tangy Purple Cole Slaw

Ingredients

  • 1 head purple cabbage, sliced thinly

  • 1 carrot, peeled, shredded

  • 1/2 cup olive oil

  • 1/2 cup apple cider vinegar

  • 1 tsp. salt

  • 2 Tbsp. sugar

  • 2 tsp. Italian herbs


Instructions:

  1. Remove the outer layer of the purple cabbage, cut out the core, and slice thinly.

  2. Peel and then shred one carrot.

  3. Pour the remaining ingredients in a mason jar, put on the lid, and shake until well mixed.

  4. Toss the cabbage and carrots in a large bowl and pour on the dressing.

  5. Let sit in the refrigerator for about 30 minutes before serving.
