Tangy Purple Cole Slaw

Ingredients
1 head purple cabbage, sliced thinly
1 carrot, peeled, shredded
1/2 cup olive oil
1/2 cup apple cider vinegar
1 tsp. salt
2 Tbsp. sugar
2 tsp. Italian herbs
Instructions:
Remove the outer layer of the purple cabbage, cut out the core, and slice thinly.
Peel and then shred one carrot.
Pour the remaining ingredients in a mason jar, put on the lid, and shake until well mixed.
Toss the cabbage and carrots in a large bowl and pour on the dressing.
Let sit in the refrigerator for about 30 minutes before serving.
